Instructions
Slice apples into a round 10-inch baking dish (heaping full). Sprinkle 1/2 cup sugar on top, followed by a little cinnamon. Cream together shortening, 1 cup sugar and eggs. Add flour, baking powder, salt and vanilla. Spread over apples. Sprinkle with a little sugar and cinnamon, as you would with a pie-crust. Bake at 350 degrees for 30 minutes. Delicious served with vanilla ice cream. (You can substitute fresh peaches or rhubarb for the apples.)
