Ingredients
| 8 | slices bacon (1/2 pound) |
| 1/2 | cup onion, chopped (1/2 - 1 cup) |
| 2 | cups potatoes, chopped |
| 1 | cup water |
| 1 | teaspoon salt |
| 1/8 | teaspoon pepper |
| 1 | can condensed cream of chicken soup |
| 1 | cup sour cream |
| 1 1/2 | cups milk |
| cheddar cheese, optional |
Instructions
Cut bacon into ½-inch pieces. In a 3-quart saucepan, cook bacon over medium heat until browned. Add onion and continue cooking, 2-3 minutes until tender, drain. Add potatoes, water, salt and pepper. Continue cooking 15-20 minutes until potatoes are tender. Reduce heat to low, stir in soup, sour cream and milk. Continue cooking, 3-5 minutes, stirring occasionally until
heated through. Season to taste and top with cheese, if desired. Serves 4-6
