Ingredients
1/4 | cup butter, softened |
3/4 | cup plus 2 tablespoons sugar, divided |
1 | egg |
1/2 | teaspoon vanilla extract |
2 1/4 | cups flour |
3 | teaspoons baking powder |
1/2 | teaspoon salt |
1 | cup half & half cream or milk |
1 | cup vanilla or white baking chips |
1 | cup fresh raspberries or strawberries |
2 | tablespoons brown sugar |
Instructions
In a large bowl, cream the butter and ¾ cup sugar. Beat in egg and vanilla. Combine flour, baking powder and salt. Add to creamed mixture, alternating with half & half cream. Stir in baking chips and berries. Fill greased or lined muffin cups ¾ full.
Combine brown sugar with remaining 2 tablespoons sugar for topping and sprinkle over batter. Bake at 375 degrees F for 25-30 minutes. Cool for 5 minutes before removing from pan. Yield: 1 dozen
