Ingredients

1 can black beans, drained and rinsed
1 can corn, drained
1/2 cup green pepper, diced
1/2 cup red pepper, diced
1/2 cup red onion, diced
1/4 cup jalapeño pepper, diced
2 tablespoons red wine vinegar
1/4 cup extra-virgin olive oil
1/4 teaspoon ground cumin
salt, to taste
pepper, to taste

Instructions

Mix all ingredients and chill. Canned black beans can be substituted with boiled fresh black beans. Serve with your
favorite tortilla chips or enjoy on a fresh garden salad.
