Ingredients
| 1 | can black beans, drained and rinsed |
| 1 | can corn, drained |
| 1/2 | cup green pepper, diced |
| 1/2 | cup red pepper, diced |
| 1/2 | cup red onion, diced |
| 1/4 | cup jalapeño pepper, diced |
| 2 | tablespoons red wine vinegar |
| 1/4 | cup extra-virgin olive oil |
| 1/4 | teaspoon ground cumin |
| salt, to taste | |
| pepper, to taste |
Instructions
Mix all ingredients and chill. Canned black beans can be substituted with boiled fresh black beans. Serve with your
favorite tortilla chips or enjoy on a fresh garden salad.
